Slurry

It’s not just a fun word.  When you’re making something that isn’t thickening properly, slurry does the job:

Whisk cold water and flour.  Drizzle it into your hot liquid while you stir like crazy.  A little goes a long way.

(Kudos to my mom, who must have taught me this, since I don’t remember not knowing it.  It’s saved the day a few times.)
